We have had a problem where several e-mails we are sending to the mail queue where tickets are either not being generated or they are not coming through in their entirety. For the tickets that do get generated, the subject is in tact but the body other than the signature will not appear in the body of the ticket. The IMAP accounts we are using for the mail queues are sitting on an exchange server. Do you have any suggestions?

What version of vision are you using ? If you can open ticket with your vision url and admin login details we would like to investigate it further.
Also in your ticket you can mention your cpanel login details so that we can check parser logs.
